Pancakes are one of the most versatile breakfast foods. They can be flavoured a million different ways, topped with fruits or chocolates, served with butter, ice cream and a variety of sauces and syrups.
Although I am more of a waffle person myself, but if you put a plate of warm, fluffy and buttery pancakes in front of me, I would not say no.
Especially if you serve them to me with a side of maple syrup and whipped cream.

February 25 marks Pancake Day this year and, since it is just around the corner, what better way to celebrate than to whip up a stack and tuck into an obscene amount of pancakes?
But alas, there’s a lot more to making pancakes than just whisking together milk, flour and eggs. There are endless recipes out there making it quite a feat to choose the perfect one. However, this easy pancake recipe from British food writer and chef Mary Berry comes quite close. Since it requires only three ingredients, it is ideal for any pancake-flipping novice.
Mary Berry’s easy pancake recipe
Makes 12 thin pancakes
Ingredients
1 egg and 1 yolk
300ml milk
125g plain flour
Method
1. Sift the flour into a bowl and make a well in the middle. Whisk together the egg, yolk and a little milk taken, then pour into the well. Whisk with a little of the flour.
2. Whisk the remainder of the milk gradually into the flour mixture. Draw the flour a little at a time in order to have a smooth batter. When you mix in all the milk, cover and leave to stand for about 30 minutes.
3. Heat the frying pan and brush with a little oil.
4. Ladle two or three tablespoons of batter into the pan and tilt the pan so that the batter spreads out evenly over the bottom.
5. Cook the pancake over a medium-high heat for 45-60 seconds until small holes appear on the surface, the underside is lightly browned and the edge has started to curl. Turn it over and cook the other side for about 30 seconds until golden.
6. Serve the pancakes as they are made, or stack them on a plate and reheat before serving.
Serving suggestion: Add lemon and sugar to keep it simple or pour syrup and chocolate sauce for a more decadent version.
