Currently, mangoes are in season, making them the perfect fit for this quick and easy recipe. The chia pudding can be enjoyed as a refreshing breakfast, filling snack, or a sweet dessert.
Chia seeds are nutritious and are a great source of omega-3 fatty acids, fibre, antioxidants, iron, and calcium.
The recipe includes dairy milk, but it can be substituted as needed, with an array of non-diary milk options such as coconut milk, oat milk, almond milk, and the list goes on.
Mango chia pudding.
Ingredients
1 mango
1 cup milk
2 tsp maple syrup
½ vanilla extract
3 tsp chia seeds
1/3 coconut flakes
Methods
- In a mixing bowl, add the chia seeds, milk, maple syrup, and vanilla extract. After mixing all these ingredients well, refrigerate it for an hour, in order for the chia seeds to expand.
- Cut up the mangoes and blend in a blender until smooth.
- After the one-hour period is up layer the chia pudding by alternating between the chia layer and the mango layer. Top of the last layer with the coconut flakes.
- It can go back in the refrigerator to be cooled before served or it can be eaten on the spot.
