The vegetable rice paper rolls is a refreshing dish that can be enjoyed at any time due to its lightness. It is filled with fresh aromatic flavours from the fresh produce that can be enjoyed on its own or with a side of sauce. The vegetable rolls are versatile in nature as the filling can be altered to your preference, some might enjoy it with shrimp, or rice noodles, or other vegetables of your choice. If the rice paper wrappers cannot be found in regular supermarkets, then an Asian store is the way to go since the wrappers are Vietnamese.

Ingredients
Rice paper wrappers
Lettuce
Cabbage
Mint leaves
Basil
Carrot
Cucumber
Bell pepper
Avocado
Grated ginger
Vegetable rolls with cucumber, carrot, bell pepper, cabbage, avocado, mint leaves and basil.
Dipping Sauce
¾ cup peanut butter
¼ cup rice vinegar
¼ cup soy sauce
3 tsp honey
1 tsp grated ginger
1 garlic clove pressed or minced
1. Prep all the vegetables. Thinly slice the cucumber, carrot, bell pepper, cabbage, and avocado. The lettuce can be chopped in medium size pieces as it will be the base layer that holds all the vegetables.
2. Whisk the dipping sauce. Add all the ingredients and whisk well, then transfer it to a serving dish.
3. Assemble the rolls. Fill a bowl with lukewarm water for the rice paper wrapper. Soak the rice paper wrappers in lukewarm water for 15 to 25 seconds to soften slightly. Make sure the water is not hot, or the wrapper will tear.
4. After soaking the wrapper place on a surface and begin adding the vegetables starting with the lettuce as a base. Add the cucumber, carrot, bell pepper, cabbage, avocado, mint leaves, basil, and grated ginger. Then tuck in the sides and roll it into a spring roll, starting from the bottom where the filling is.
