The peanut butter energy bites are the perfect high-protein snack, especially for on the go. The recipe calls for no baking involved making it an easy and quick healthy snack to munch on. It takes approximately 10 minutes to make a batch that can last up to a week for a quick pick me up. Additionally, there is no need for a food processor in this recipe.
Note: protein balls or energy bites can sometimes be crumbly or dry, which is normal depending on the ingredients soaking up the wet ingredients. To fix this issue add a little water or milk, one teaspoon at a time until the mixture sticks together when forming into balls. Make sure to try forming the mixture into balls first before following this note, in case your mixture is already perfect.
Ingredients
1 cup peanut butter
1 cup rolled oats
¼ cup honey
½ cup shredded coconut
2 tsp chia seeds
2 tsp chocolate chips
Instructions
1. In a bowl mix the following: peanut butter, rolled oats, honey, shredded coconut, chia seeds, and chocolate chips.
2. Use a small scoop or spoon to scoop and form the mixture into balls.
3. If the mixture doesn’t hold together well then add some water (2-5 tsp). Add a teaspoon at a time until the mixture holds together well when pressed.
4. Store in a covered container in a fridge.
